My favorite kind of cakes are anything with lemon and this Lemon cake with a blueberry glaze is just the perfect tangy combination. This cake kind of reminds me of Halloween. I’m not sure if it’s the color of the blueberry glaze or the candle holder in the scene or the overall theme in the scene. But I love it anyways,

This Lemon cake with a blueberry glaze is so easy to make. To intensify the lemon flavor in the cake, I decided to add both lemon juice and lemon zest. The lemon zest really makes a difference and you don’t want to exclude it. I also preferred to use sour milk as opposed to normal milk because I love the tartness.

The blueberry glaze is also quite easy to make. I cooked the blueberries on low heat in a sauce pan with some sugar until they break and form a paste. You can substitute the sugar with something healthier like honey or maple sugar.

The cake can be a perfect snack alternative or a desert option. It can be enjoyed either warm or cold with a cup of milk.

Ingredients
  

Lemon Cake

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sour milk
  • 1/2 cup coconut oil
  • 1 cup sugar
  • 1/2 cup lemon juice + zest
  • 2 eggs

Blueberry Glaze

  • 1/2 cup blueberries
  • 2 tsp sugar

Instructions
 

  • Preheat oven to 180 degrees C and line a bread tin with parchment paper
  • Ina large bowl combine flour, baking powder, salt. and set aside
  • In a another bowl, whisk together eggs, oil, sour milk,lemon juice and zest until combined
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely before drizzling the glaze.

For the Glaze

  • Put blueberries and sugar in a cooking pot under low heat. Cook into a glaze
