Kid Friendly Spirulina Oat Bars

These Spirulina Oat Bars are kid friendly, easy to make and packed with nutrients. There’s a good amount of protein from the spirulina, healthy fats and seeds and are perfect for breakfast or as a snack.

Equipment

  • Food Processor/ Blender
  • 9 inch bread tin

Ingredients
  

  • 2 cups Oats
  • 3 tbsp Pumpkin seeds
  • 3 tbsp Flax seeds
  • 1/4 tsp Salt
  • 5 Pitted dates
  • 3 tbsp Spirulina Powder
  • 2 tbsp Coconut oil

Instructions
 

  • Gather ingredients in a bowl and mix to combine.
  • Transfer the mixture in a blender or food processor and pulse to a wet sand-like mixture. If using a blender, keep mixing with a spoon to avoid sticking to the bottom. You want the mixture to hold together when pressed between fingers.
  • Line a 9'' bread tin with parchment paper and transfer the mixture into it.
  • Press the mixture firmly using your hands or a spoon. You'll need to evenly distribute the mixture and press it down firmly.
  • Refrigerate the tin with the mixture for at least 1 hour. This will help firm the mixture up and ease in cutting it into bars.

Notes

  1. You can adjust the spirulina powder to your liking. I love the taste and the color so I added 3 tablespoons.
  2. Feel free to add other seeds or nuts. Chia seeds, almonds and peanuts would work best with this recipe.
  3. Feel free to substitute the coconut oil with any nut butter you like, e.g. peanut butter or cashew butter. You need a butter or oil that can hold the mixture together as well as provide flavor.
  4. Use any baking tin size to assemble the mixture. Be sure to adjust the amounts to fit your baking tin of preference.
