Pea Pizza With Chicken, Mozzarella And Lemon Zest

Ingredients
  

Pizza Dough

  • 1 1/3 cup All purpose flour
  • 1 cup Warm water
  • 2 tsp Instant yeast
  • 1 tbsp Sugar
  • 2 tbsp Olive oil
  • Pinch of salt
  • Cornmeal to dust the pan

Pizza Filling

  • 1 cup Shredded chicken breast
  • 1 Onion (cut into circles)
  • 1/2 Red pepper thinly sliced
  • 1 cup Boiled peas
  • 1/4 cup Shredded Mozzarella cheese
  • 2 tbsp Lemon zest
  • Sea salt to taste
  • Chives to serve

Instructions
 

Pizza Dough

  • In a large bowl, add warm water, yeast and sugar and whisk to combine. Let it rest for 5 minutes .
  • Add olive oil, salt and flour and start combining until it forma a homogenous dough
  • Transfer to a lightly floured surface and knead for 5 minutes until it doesn't stick any more. add flour as needed. The dough should be soft.
  • Lightly grease a large bowl with oil and place the dough inside. Cover with a kitchen cloth and allow the dough to rise at room temperature for 30 minutes.
  • Pre-heat oven to 200 C and allow to heat for 20 minutes as you prepare the dough.
  • Lightly grease a baking pan with oil and sprinkle cornmeal. This will give your pizza a nice crunch and flavor.
  • To shape the dough, place it on a lightly floured surface and stretch it out with your fingers into a rough rectangular shape and dust with flour on both sides.
  • Place it on the floured baking sheet and pre-bake for 15 minutes.
  • Remove and start spreading the fillings.

The Filling

  • After 15 minutes of pre baking the dough, start assembling the fillings. Add cheese, onions, shredded chicken, peas, peppers and more cheese and bake for 20 minutes.
  • Remove from the oven and serve with orange zest and chives, Enjoy.
