Hassle Free Mbuzi Choma| Barbeque Goat Ribs

Every Kenyan will tell you that we're known for our nyama choma.  Grilling mbuzi choma can be quite the task, but this recipe is hassle free as everything marinates and cooks within 2 hours.

Ingredients
  

  • 2 kgs Goat ribs
  • 2 tbsp Minced garlic
  • 1 tbsp Paprika powder
  • 1 tbsp Meat seasoning
  • Salt & pepper, to taste
  • 3 tbsp Pure Mountain Herb infused canola oil
  • 1/4 cup Lemon juice

Instructions
 

  • Mix all the marinade ingredients until well combined.
  • Rub the mixture into the goat ribs until well coated, save any excess
  • Let the meat marinate in the fridge for about 30 minutes. Before grilling remove the ribs from the fridge and let it thaw at room temperature for 15 minutes.
  • Light up a grill until the heat is quite hot.
  • Let the meat char for about 5 minutes on both sides, then cover it with a foil and raise the grill so that the heat is not so direct.
  • Let the ribs cook covered in foil for an hour. Keep rubbing the marinade unto the ribs .
  • After one hour let the ribs rest for 10 minutes before cutting. Enjoy with some roat potatoes, ugali and kachumbari.
