The Best Mukimo Using Split Peas

This recipe uses split peas to make mukimo. It's the easiest and less time consuming way of making mukimo.

Ingredients
  

  • 4 cups Pure Mountain Split Peas
  • 2 tbsp Pure Mountain Canola Oil
  • 1 Finely chopped onion
  • Handful of finely chopped green onions
  • 5 cups Chopped spinach
  • 5 Large potatoes
  • 1 tbsp Salt

Instructions
 

  • Start by boiling the split peas. These do not require pre-soaking. Wash and rinse the split peas. Put them in a heavy duty pot and cover with cold water. Cook for 30 minutes until they soften.
  • Peel and wash the potatoes. Bring to a boil with enough salt. They should be almost mushy for easier pounding.
  • Start frying the onions in Pure Mountain Canola oil until they soften. Then add chopped green onions and cook for 2 minutes.
  • Add chopped spinach and salt and cook for 8 minutes. The spinach will reduce in size significantly.
  • Add the boiled potatoes and split peas. Start mashing everything together while still cooking. Reduce heat to low and continue mashing until everything comes together. Adjust salt if needed.
  • Remove from heat and serve with beef stew.
