I used pre-made vegetable stock but you can make your own by boiling some vegetables _carrots, onion, garlic, ginger, leeks, celery with lots of water. If not you can still use water with stock cubes.
Start by cutting carrots and green peppers into julienne/thin strips
Cut up spring onions and red onion thinly
In a skillet under medium heat, cook garlic and ginger
Add soy sauce and vegetable stock and bring to a boil.
Cook noodles as per the instructions.
Place noodles into two bowls.
Add the broth, then add the carrots, green peppers, onion, spring onions and the boiled eggs.
Serve with bumbu sauce and enjoy.
