Moringa Porridge Vegan Pancakes

If you’ve been reading my blogs you know how much I rave about Superfoods. Moringa and Spirulina powders being my favorite. As a fanatic I love to find interesting ways to enjoy these superfoods. I feel like Moringa is highly underrated but it’s nutrient profile is unmatched.
What is Moringa?
Sometimes mistaken with Matcha for their same taste and green color, Moringa is a nutrient-packed plant is also known as the “miracle tree” with more vitamin C than oranges, more vitamin A than carrots, more potassium than bananas, and more iron than spinach and kale (Sukuma wiki).
Nurture and Reset is a Kenyan Moringa provider and they source their Moringa from local small scale farmers. They have combined foxtail millet, rice flour and moringa powder to bring us some delicious Moringa Porridge at a very affordable price of Kshs. 300. The porridge can be enjoyed in itself by adding water or milk and cooking it for 15 minutes or can be used to make these pancakes as well. The moringa porridge is high in fiber, very rich in calcium and the kids will be delighted to try it too.
What You’ll Need To Make These Moringa Porridge Vegan Pancakes
- Moringa Porridge(Nurture & Reset) – The ingredients are simple and vegan; moringa powder, foxtail millet and rice flour.
- Gluten-free white flour – This will help the pancakes hold better. If you’re not gluten sensitive substitute with all-purpose flour.
- Non-dairy milk– I love to use almond milk as it’s sweeter. Feel free to use any milk of choice from oat milk, soya milk or whole milk.
- Sugar– To sweeten. Substitute with honey or maple syrup if vegan.
- Baking powder– This acts as a leavener and creates bubbles in the batter and when cooked results in a light and fluffy pancakes.
How To Make Moringa Porridge Pancakes
- Start by combining the ingredients in a large bowl to make the batter.
- Heat a pan over medium heat with some oil.
- Scoop a little batter into the pan and cook until bubbles start to form.
- Flip and cook the other side, then repeat until the batter is done.

Moringa Porridge Vegan Pancakes
Ingredients
- 1½ cups Moringa porridge(Nurture & Reset)
- 1 cup Gluten free white flour
- 2 tbsp Sugar
- 1 ½ tsp Baking powder
- 1 ½ cups Almond milk
- Pinch of Salt
- Olive oil (for cooking)
Instructions
- In a large bowl, add moringa porridge flour, gluten free flour and baking powder and combine.
- Add almond milk and sugar and stir or whisk until it forms a batter. Adjust the batter to your liking by adding or reducing the milk for a lighter or thicker batter
- Heat a pan and season with a little olive oil, then pour about a third scoop of the batter
- Once bubbles start to appear, flip the pancakes and remove from heat
- Cook the rest of the pancakes the same way until all the batter is done.
- Top with sliced strawberries and drizzle some honey
