Pea Pizza With Chicken, Mozzarella And Lemon Zest
Peas on Pizza? Listen, no, trust me it works! This pizza is loaded with peas, peppers, chicken, mozzarella cheese and flavored with lemon zest and chives. If you struggle to make your pizzas healthy then this is the closest recipe to that. The peas add a nice crunch while the chicken is a good source of protein.
Making your own pizza dough is so easy and takes no much time. You need only a few ingredients; flour, yeast, water, sugar, oil and salt. Make sure to let the yeast grow for a few minutes before combining the ingredients. Allow the dough to rest for at least 30 minutes to rise and soften.
The secret to a crunch and flavorful crust is dusting the baking pan with corn meal that will also help the dough not stick on the pan. Trust me the crust to this pea pizza with chicken, mozzarella and lemon zest is on another level. You’ll end up wanting to eat it even by itself.
In this recipe I recommend pre baking the crust before assembling the fillings. This is essential since the filling ingredients are already pre cooked except the peppers and onions that cook pretty fast. We want the crust pre baked first to make sure the rest of the ingredients are not cooking in the oven for too long.
As for the filings you may choose to add as most vegetables as you wish. I went with boiled peas, red peppers, onions and chose chicken as the source of protein. You want to have the chicken pre-cooked then shredded to cook easily. I chose mozzarella cheese as I love the taste better and think it work best with pizza.
To finish off everything, you need to add lemon zest and chives. Trust me the flavors just come together beautifully. Pea Pizza With Chicken, Mozzarella And Lemon Zest
Ingredients
Pizza Dough
- 1 1/3 cup All purpose flour
- 1 cup Warm water
- 2 tsp Instant yeast
- 1 tbsp Sugar
- 2 tbsp Olive oil
- Pinch of salt
- Cornmeal to dust the pan
Pizza Filling
- 1 cup Shredded chicken breast
- 1 Onion (cut into circles)
- 1/2 Red pepper thinly sliced
- 1 cup Boiled peas
- 1/4 cup Shredded Mozzarella cheese
- 2 tbsp Lemon zest
- Sea salt to taste
- Chives to serve
Instructions
Pizza Dough
- In a large bowl, add warm water, yeast and sugar and whisk to combine. Let it rest for 5 minutes .
- Add olive oil, salt and flour and start combining until it forma a homogenous dough
- Transfer to a lightly floured surface and knead for 5 minutes until it doesn't stick any more. add flour as needed. The dough should be soft.
- Lightly grease a large bowl with oil and place the dough inside. Cover with a kitchen cloth and allow the dough to rise at room temperature for 30 minutes.
- Pre-heat oven to 200 C and allow to heat for 20 minutes as you prepare the dough.
- Lightly grease a baking pan with oil and sprinkle cornmeal. This will give your pizza a nice crunch and flavor.
- To shape the dough, place it on a lightly floured surface and stretch it out with your fingers into a rough rectangular shape and dust with flour on both sides.
- Place it on the floured baking sheet and pre-bake for 15 minutes.
- Remove and start spreading the fillings.
The Filling
- After 15 minutes of pre baking the dough, start assembling the fillings. Add cheese, onions, shredded chicken, peas, peppers and more cheese and bake for 20 minutes.
- Remove from the oven and serve with orange zest and chives, Enjoy.
