This step by step on making the most basic apple galette is all you need to provide your guests with a simple but elegant dessert. When I think of French desserts I imagine very fancy, majestic macarons and glossy tarts. The truth is, when they bake at home they make everything so basic and easy.  A galette is the easiest form of any pie. It require no complicated puff pastry. The dough comes together in minutes and you require no pie dish to bake it.

Step 1: Making the Dough

A few important things to note when making this basic apple galette;

  1. Make sure the butter and water you use is cold. For the water I prefer using ice cubes then add a little bit of water. If you’re working on a hot day freeze also the bowl  you’ll use to mix everything in.
  2. When you combine butter and flour, press the flour and butter together using your thumb and the index  finger in a pinching motion until you get pea sizes.
  3. Add a tablespoon at a time of ice cold water as you combine the dough to come together. Keep adding until the dough comes together, not too wet and not too dry.
  4. Transfer to a lightly floured surface and kneed until it forms a cohesive ball.
  5. Refrigerate for 30 minutes. Then transfer it again for rolling. Roll into a rectangle and do a letter fold, then roll it again to a rectangle and do another letter fold. Then roll it a little and shape into a disc. If you find that your dough always breaks at when you roll it, make sure to always include this step and your dough will always be perfect. Once you have your disc refrigerate it again for 30 minutes.

Step 2: The Filling

  1. For the apples I always use pink lady apples as they’re the best and they hold their shape very well when baked.
  2. Always use a parchment paper to line your baking tray as this helps the dough not stick to the tray.
  3. Transfer the rolled out dough before you start filling it with apples. This is easier than trying to transfer it after its been filled.
  4. Always brush the top of the dough after folding with egg wash. This helps the crust brown evenly while baking.
  5. Sprinkle a little bit more sugar on the crust for texture.

Equipment

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 2 tbsp sugar
  • Pinch of salt
  • 1/2 cup butter cold
  • Ice water
  • 3 apples
  • 1 tbsp sugar
  • 1/2 tbsp cinnamon
  • 1/2 tsp cardamon
  • 2 tbsp lemon juice
  • egg wash

Instructions
 

The Dough

  • Combine flour, sugar and salt in a bowl and mix together
  • Add cubes of butter and combine the butter with the flour until it resembles a pea sized mixture
  • Add a tablespoon at a time of cold water and combine the mixture until it comes together. If the dough is too dry add a little water.
  • Knead a few times on a lightly floured surface until it comes together
  • Shape into a ball and wrap with a plastic wrap. Refrigerate for one hour
  • After one hour, roll it into a rectangle on a floured surface then letter fold it, roll it into a rectangle and letter fold it again. Then roll it out and shape it into a disc. Then re-wrap and refrigerate again for 30 minutes or overnight. This step helps bring the dough together and eases the rolling out stage later. Your dough will not have cracks when you roll it out.

The Filling

  • Cut your apples into thin slices, coat them with sugar, lemon juice, cinnamon and cardamon.
  • Remove dough from the fridge and roll it into a circle on a floured surface. Transfer it into a baking tray lined with baking paper.
  • Arrange apples on top of the dough, leaving about an inch and a half around the edge.
  • Fold the edge inwards until all the edges are folded towards the fruit.
  • Brush with the wash over crust, add dollops of butter in the apple filling and sprinkle a bit more sugar on top of the crust.
  • Pre-heat oven to 180 degrees C and bake for 40 mins until crust is golden brown. Let it cool before serving.
  • Serve with a scoop of ice cream.
