These grilled honey balsamic chicken skewers are my attempt of making chicken more fun and healthy especially during this holiday season without deep frying them as chicken can get a little boring especially if you eat it on a regular basis and . They can be served as an appetizer before guests arrive, main course or as bitings with your holiday drinks and cocktails.

This recipe calls to use chicken breasts marinated in Pure Mountain Honey Balsamic dressing to keep it moist and prevent it from drying during grilling. INGREDIENTS NEEDED FOR GRILLED HONEY BALSAMIC CHICKEN SKEWERS

You will need the following ingredients to make these chicken skewers but before that we’ll need to marinate the chicken breasts in spices and pure mountain honey balsamic dressing. For the marinade you’ll need;

  1. Pure Mountain Honey Balsamic dressing– This dressing is made from pure cold pressed canola oil, vinegar, honey, mustard, salt & pepper.
  2. Pure Mountain chili infused Canola oil
  3. Minced garlic and ginger
  4. Lemon juice
  5. Salt & pepper

To assemble the honey balsamic chicken skewers we’ll need to add a few vegetables to assemble the skewers. The vegetables provide body for the skewers.

  1. Chicken breast
  2. Red peppers, cubed
  3. Yellow peppers, cubed
  4. Onions, cubed

HOW TO MAKE GRILLED CHICKEN SKEWERS

  1. Start with cutting the chicken breasts into cubes and wipe down any moisture from them.
  2. In a bowl mix all the ingredients of the marinade and add the cubed chicken into this bowl. Mix well until all the chicken is coated with the marinade. refrigerate for at least 30 minutes. Save any remainder marinade for basting while grilling.
  3. If using wooden skewers, soak them in cold water for 10 minutes before assembling. This will prevent them from burning.
  4. Start assembling by threading chicken breast and alternating with peppers and onions. Leave a few inches on the skewer for holding.
  5. Heat the grill (whether charcoal, gas stove or grill pan) until hot, add Pure Mountain chili infused oil , this will help keep the chicken moist, then arrange the honey balsamic chicken skewers on your grill pan, leaving a few inches between each skewer.
  6. Let it cook for about 3 minutes on each side or until the meat turns brown and the peppers and onions look cooked.
  7. As the chicken turns brown coat them with the remaining marinade using a brush and let them cook for 1 minute as you keep turning.
  8. Repeat for all the skewers and let them cool for 5 minutes before enjoying.

Equipment

  • wooden skewers

Ingredients
  

  • 2 Breasts, cut into cubes
  • 1 cup Cubed yellow peppers
  • 1 cup Cubed Onions
  • 1 cup Cubed red peppers

Marinade

  • 3 tbsp Minced garlic & ginger
  • 3 tbsp Pure Mountain Honey balsamic dressing
  • 2 tbsp Pure Mountain Chili infused Canola Oil
  • 2 tbsp Lemon juice
  • Salt & pepper, to taste

Instructions
 

  • Make the marinade by mixing together all the ingredients
  • Rub the marinade into the chicken cubes and let it marinate in the fridge for 30 minutes
  • Soak wooden skewers in cold water to prevent them from burning.
  • Start assembling the skewers by alternating, peppers, chicken and onion
  • Once assembled, heat up a griddle over hot heat and add some Pure Mountain Chili infused canola oil.
  • Lay a few skewers on the hot gridle and cook for 4 minutes while turning. Repeat until all the skewers are cooked.
  • If using a grill, light it up until hot then lay the skewers and grill. be careful not to burn as the heat is more on the grill. Serve with some kachumbari.
