Mahamris are a common Kenyan snack usually in the Coastal part served as a breakfast option with tea or coconut bean stew. The original Swahili recipe is not as healthy as I’d like them to be and this is why in this recipe I’ll be showing you how to cook healthy soft coconut mahamri/mandazi using coconut milk and whole wheat flour.

Traditional mahamri recipe calls to use all purpose flour, milk, butter/blueband, while milk, sugar, cardamom and dried yeast. In this healthy recipe we’ll be using whole wheat flour, coconut sugar and coconut milk to provide more health benefits to our mahamris. mixed with a little all purpose flour, coconut milk and flakes, Pure mountain Canola oil, yeast and cardamom.

WHAT YOU’LL NEED TO COOK HEALTHY COCONUT SOFT MAHAMRI/MANDAZI

  1. Whole wheat flour
  2. All purpose flour
  3. Pure Mountain pure canola oil
  4. Coconut milk
  5. Coconut sugar
  6. Desiccated coconut flakes
  7. Dry yeast
  8. Cardamom & cinnamon powder
  9. Salt

STEP BY STEP HEALTHY SOFT COCONUT MAHAMRI/MANDAZI

Soft mandazis are achieved by how you knead the flour and how fresh your yeast is.  make sure to get fresh yeast and to let the dough rise in a warm place.

  1. In a large add whole wheat flour, all purpose flour, coconut sugar, flakes and cardamom powder and combine together
  2. In another bowl mix coconut milk and yeast and let it form bubbles.
  3. Add this milk mixture into the flour and mix until the dough comes together.
  4. Transfer the dough unto a lightly floured surface and knead for about 10-15 minutes. Take sometime here as this contributes to soft mahamri. Form into a ball and place in a bowl to proof in a warm area for 1 hour.
  5. After one hour, divide the dough into small quarters then form them into small balls.
  6. Take one ball and cover the rest in a damp cloth to avoid drying out.
  7. Press the ball into a circle and start rolling it into a bigger circle. Then cut the circle into 4 quarters/triangles. Repeat the rest of balls.
  8. Heat a deep frying pan with some Pure Mountain pure Canola Oil until hot. Use a wooded spoon to test how hot the oil is. If you see lots of bubbles the oil is hot enough.
  9. Drop a few triangular pieces into the oil and make sure not to overcrowd. Cook each side until lightly brown. Remove from heat and continue until all the mahamris are cooked.
  10. Enjoy with some tea.

Ingredients
  

  • 1 1/2 cups Whole wheat flour
  • 1 cup All purpose flour
  • 5 tbsp Pure Mountain pure canola oil (more for frying)
  • 1 1/2 cups Coconut milk
  • 1 cup Coconut sugar
  • 1 cup Desiccated coconut flakes
  • 1 sachet Dry instant yeast
  • 1 tbsp Cardamom powder
  • 1 tsp Cinnamon powder
  • Pinch of salt

Instructions
 

  • In a large bowl add whole wheat flour, all purpose flour, coconut sugar, flakes, yeast and cardamom powder and combine together
  • Add coconut milk into the flour and mix until the dough comes together.
