African sausage or Mutura made by stuffing beef into a cows tripe and grilling it.

Equipment

Ingredients
  

  • 500 g Beef, cut into small pieces
  • 3 tbsp Pure Mountain herb infused canola oil
  • 1 Tripe/cow intestine
  • 1 cup cow blood
  • 1 cup Chopped onions
  • 2 tbsp Red chilli
  • 2 tbsp Minced garlic
  • salt & pepper, to taste

Instructions
 

  • Cook onions and garlic using the canola oil, then add red chilies. Cool completely
  • In a bowl add the chopped beef, cow blood, salt and pepper, cooled onion mix and combine.
  • Staff this mixture inside the uncooked stripe and tie on both ends.
  • Heat a grill and cook the mutura over medium high until it turns golden brown. brush canola oil to avoid drying.
  • Serve with ugali and kachumbari
