Hassle Free Mbuzi Choma| Barbeque Goat Ribs

Every Kenyan will tell you that we’re known for our nyama choma.  Grilling mbuzi choma can be quite the task, but this recipe is hassle free as everything marinates and cooks within 2 hours. Nyama choma means barbequed meat and it’s quite a delicacy in Kenya served during holidays, weddings and often whenever friends and family gather there must be some nyama choma. Most people prefer beef or goat to barbeque. Goat meat is quite soft and tends to barbeque better without making the meat too tough.

So as not to over complicate the flavors, we’ll be using Pure Mountain herb infused canola oil and very few spices. This herb infused oil is full of rosemary, thyme and peppercorns which provides enough herbs to season the meat. This blog post is in partnership with Pure Mountain Canola oil.

INGREDIENTS USED

The way to make this mbuzi choma hassle free is the time it takes from making the marinade to grilling. This requires making the marinade in one large bowl and marinating the ribs then straight into grilling.

  1. Goat ribs– look out for young goat ribs as they grill better and tend to hold unto the marinade better.
  2. Pure Mountain Herb infused Canola oil. Because it’s infused with rosemary, thyme and peppercorns, it will provide more flavor into the meat without the addition of other herbs.
  3. Spices of choice. I chose paprika and beef seasoning for extra flavor
  4. Garlic & ginger paste– this will provide more flavor
  5. Lemon juice to bring everything together
  6. Salt and pepper to taste.

Mix the marinade ingredients in a bowl and rub it into the goat ribs. Wrap the ribs in cling film and refrigerate for at least 30 minutes.  This will make sure the marinade penetrates the ribs well. Before grilling remove the ribs from the fridge and let it thaw at room temperature for 15 minutes.

HOW TO MAKE HASSLE FREE MBUZI CHOMA

You can use an oven or a grill to cook the ribs. If using an oven preheat it to 180 C and wrap the ribs in foil, drizzle some Pure mountain Herb infused canola oil, then place them at the center of the oven and grill for about one and a half hours while turning occasionally. Wrapping the ribs will keep the marinade from seeping out while keeping the ribs moist.

If using a grill, prepare it by placing charcoal and lighting it until hot. When the heat is quite hot, char the meat on both sides, then cover the ribs in aluminum foil. Raise the grill to keep it a few inches from the fire and let it cook for about an hour. Keep basting with the remaining marinade and canola oil to keep the meat moist. Once done, remove from the grill or oven and let it rest before cutting.

Hassle free mbuzi choma cooks in  a few hours while still retaining a lot of flavor from the marinade. Serve this nyama choma with some ugali, roast potatoes and kachumbari. Try this recipe as it’s easy and requires very little effort at all. For recipes that require marinating meat, Pure Mountain herb infused canola oil is perfect as the addition of rosemary and thyme adds more flavor. Ingredients
  

  • 2 kgs Goat ribs
  • 2 tbsp Minced garlic
  • 1 tbsp Paprika powder
  • 1 tbsp Meat seasoning
  • Salt & pepper, to taste
  • 3 tbsp Pure Mountain Herb infused canola oil
  • 1/4 cup Lemon juice

Instructions
 

  • Mix all the marinade ingredients until well combined.
  • Rub the mixture into the goat ribs until well coated, save any excess
  • Let the meat marinate in the fridge for about 30 minutes. Before grilling remove the ribs from the fridge and let it thaw at room temperature for 15 minutes.
  • Light up a grill until the heat is quite hot.
  • Let the meat char for about 5 minutes on both sides, then cover it with a foil and raise the grill so that the heat is not so direct.
  • Let the ribs cook covered in foil for an hour. Keep rubbing the marinade unto the ribs .
  • After one hour let the ribs rest for 10 minutes before cutting. Enjoy with some roat potatoes, ugali and kachumbari.
