How To Make Mutura At Home
Mutura, often referred to as African sausage, is a beloved traditional delicacy in Kenya and many other African countries. We make this flavorful sausage by stuffing beef, spices, and cow blood into a cow’s tripe or intestine, then grilling it to perfection. Whether you’re hosting a barbecue or simply craving a taste of home, I’ll guide you through the steps to make mutura at home.
Ingredients You’ll Need to Make Mutura at Home
- 500g Beef: Cut into small pieces for easy stuffing.
- 3 tbsp Pure Mountain Herb Infused Canola Oil: Adds a rich flavor to the onions and garlic.
- 1 Tripe/Cow Intestine: This serves as the casing for the sausage.
- 1 cup Cow Blood: Essential for that authentic mutura taste.
- 1 cup Chopped Onions: Adds sweetness and flavor.
- 2 tbsp Red Chilli: For a spicy kick.
- 2 tbsp Minced Garlic: Enhances the overall flavor.
- Salt & Pepper: To taste, for seasoning.
Step-by-Step Guide on How to Make Mutura at Home
1. Prepare the Onion Mix:
Start by heating the canola oil in a pan. Add the chopped onions and minced garlic, cooking until they’re soft and translucent. Stir in the red chilies for a bit of heat. Once cooked, set the mixture aside to cool completely.
2. Combine the Ingredients:
In a large bowl, mix the chopped beef, cow blood, salt, and pepper with the cooled onion mixture. Ensure everything is evenly combined for a consistent flavor.
3. Stuff the Tripe:
Take the uncooked tripe and carefully stuff it with the beef mixture. Be sure to pack it tightly, then tie the ends securely to prevent the stuffing from spilling out during cooking.
4. Grill the Mutura:
Preheat your grill to medium-high heat. Place the stuffed mutura on the grill and cook it until it turns a golden brown color. This usually takes about 40 minutes. Brush the mutura with canola oil occasionally to keep it moist and prevent it from drying out.
5. Serve and Enjoy:
Once cooked, slice the mutura and serve it with traditional sides like ugali and kachumbari. Enjoy this savory treat that’s packed with rich flavors and spices.
Tips for the Perfect Mutura:
- Ensure the onion mixture is completely cooled before mixing it with the beef and blood to prevent the sausage from cooking prematurely.
- Don’t overstuff the tripe to avoid bursting while grilling.
- Keep an eye on the grill to avoid burning; mutura should be golden brown, not charred.
