Super Easy Chocolate Chia Pudding

This recipe was meant to go up in December but the way my December was set up! There was a lot of travelling; from Kigali to Nairobi to Mwanza and back to Nairobi. I tell you I have not had time to sit down and write blog posts until now. It feels only right now to have this recipe in January as most of us are embarking on healthy eating. This Chocolate chia pudding is perfect for breakfast and as a snack as it’s healthy and super easy to make. It can be made the night before and enjoyed the following day.

Super easy Chocolate chia pudding

If you have not had chia puddings before then you want to definitely try this recipe. You only need a few ingredients for this recipe, and you don’t necessarily need to make it with this design, I’m just a little extra with it for photography purposes. I chose coconut milk as my milk of choice but you can use any milk you prefer.

This recipe is quite simple and straightforward, once you have the chia base ready you may flavor it as you wish. I chose chocolate because why not. Everything is perfect with chocolate. If you’re curious about how i got the design on the glass; I tilted the glass on a cupcake cup or you can use another glass, just make sure the glass is at an angle before pouring the pudding. Let that layer set in the fridge before pouring the next layer. This is an optional step and you can mix everything together and skip on the corn starch.

Ingredients Needed For This Super Easy Chocolate Chia Pudding

  1. Chia seeds
  2. Coconut milk
  3. Honey
  4. Corn starch (optional) I used it to thicken the pudding and help it set
  5. Dark chocolate (Optional)-you may use cacao powder as it works just fine.

Chocolate Chia Pudding

This chia pudding is the perfect treat with the perfect chocolate balance.
Servings 2 servings

Ingredients
  

Chocolate Pudding

  • 1 cup Coconut milk
  • 1 tsp Honey
  • 1 tbsp Corn starch
  • 1 cup Dark chocolate

Chia Pudding

  • 1 cup Coconut milk
  • 1 tbsp Honey
  • 3 tsp Chia seeds

Instructions
 

Chia Pudding

  • Add coconut milk, honey and chia seeds in a jar and whisk a couple of times for about 10 minutes. This is to avoid the chia seeds from settling at the bottom. Then store in the fridge for 2 hours. You can also make this a day before and leave in the fridge overnight.

Chocolate Pudding

  • In a small saucerpan, add coconut milk, chocolate cut into chunks and honey and bring to a simmer. Whisk until the chooclate melts then bring to a boil. Add in cornstarch and whisk until well dissolved.
  • Remove from the heat and let cool slightly.

The Assembly

  • Put your glasses inclined in a muffin cup, to get that diagonal line.
  • Pour the chocolate mixture slowly until you reach your desired height.
  • Put the glasses in the fridge and wait for it to cool, about 30 minutes.
  • Once cooled, add the chia pudding on top of the chocolate pudding.
  • If you find that the mixture starts to settle and become thick before you're done pouring, just return to the heat and whisk.
