The Best Pea Soup Recipe
Is it just me or does this weather just make you want to keep having hot soup? I made the best pea soup ever and has very minimal ingredients that you probably have in your kitchen. The key to making the best pea soup is to make it from scratch. I always have soup during those days that I crave a cozy warm meal. Ingredients For The Best Pea Soup
- Fresh peas – For that vibrant green color, fresh peas are the best as opposed to frozen ones. They also taste better.
- Vegetable stock – You can make this by boiling your favorite vegetables like carrots, garlic, celery, onion and fennel.
- Medium potato – This will help thicken the soup without having to add any cream.
- Olive oil – To sauté the vegetables. You can substitute with vegetable oil.
- Ginger, garlic, onion & fresh thyme – This will add lots of flavor to your soup.
- Salt – Don’t forget to add your salt when the vegetables are cooking.
How To Make The Pea Soup
- First you need to sauté your vegetables, the onion, garlic, ginger, potato and thyme with some olive oil and salt.
- Add vegetable stock and peas. Do not pre boil your peas as the peas will over cook and lose the color. Add the peas together with the vegetable stock to get them to retain their color.
- Once everything is soft and cooked through, put it in a blender and blend to your consistency. I like to leave little chunks of peas in my soup so as to have something to chew on, but you can puree until super smooth if that’s what you like.
How To Store The Soup
The soup can store in the fridge for 3 days or in the freezer for up to 3 months in an airtight container. When you need to use it, thaw it in the fridge the night before then reheat on a stove or in the microwave. You will notice that the soup will thicken more as it gets cold so don’t be afraid to add a little water or vegetable stock when reheating.

The Best Pea Soup Recipe
Ingredients
- 3 cups Fresh peas
- 1 medium Potato
- 1 Onion
- 2 cloves Garlic
- 1 tbsp Ginger
- 1 tsp Fresh thyme
- 1 tbsp Olive Oil
- 3 cups Vegetable stock
- 1 tsp Salt
Instructions
- Cut up potatoes into cubes, and cut onions thinly then set aside
- Heat up olive oil over medium heat then add onions, garlic, ginger and fry. Add thyme and keep stirring.
- Add in the potatoes and salt and cook for about ten minutes. Then add in the peas and the vegetable stock. Reduce the heat and let it simmer until the peas and potatoes get soft for about 20 minutes.
- Pour the soup in a blender and blend until you reach your desired consistency.
- Serve with blanched peas and enjoy.
