The Healthiest Strawberry Tart Recipe

Most of the tarts I make are healthy, but this Strawberry tart I believe is the healthiest I’ve made so far. This cold season is doing us no justice, being cooped up in the house all week and not being able to enjoy any sunshine. I have come to appreciate the outdoors so much more these days, with all this Rona and the July weather going around. When it’s summer in the States it’s cold season here in Kenya.

I find so much pleasure in going to the park lately and eating outdoors. With the fresh air and the breeze from the trees this has become my new found joy. I get to do this at least once every weekend with a couple of friends, a good snack that I normally prepare and a few drinks. Also it’s my way of paying my friends with a good dessert once I’m done with my photography.

On this particular weekend I decided to make this beautiful majestic cheesecake layered with fresh strawberries. The base is made from crushed biscuits mixed with coconut oil, while the filling is a tasty coconut cream set using agar agar powder and sweetened with honey. I carried my favorite flowers to create a picnic ambience and because tarts look better when flowers are added to the scene. The life of a photographer! Never forget important props.

  • Crushed sugar free biscuits
  • Coconut oil
  • Coconut cream
  • Honey
  • Agar agar powder
  • Strawberry to serve

The Healthiest Strawberry Tart Recipe

Miss Kabaki
This Strawberry tart is the easiest to make and so healthy. Only 4 ingredients needed biscuits, coconut cream, honey and agar agar powder.

Ingredients
  

Crust

  • 1 pkt biscuits (sugar free)
  • 1/3 cup coconut oil

Filling

  • 2 cans coconut cream
  • 1/4 cup honey
  • 2 tsp agar agar powder/ gelatin
  • strawberries for the top

Instructions
 

Crust

  • Crush biscuits to fine powder
  • Add coconut oil and combine until it looks like wet sand
  • press it into the tart tin using a cup to even it out. Refrigerate as you make the filling.

Coconut Filling

  • In a cooking pot under medium heat, add coconut cream, honey and agar agar powder.
  • Stir until the powder dissolves
  • Cook for 10 minutes until the mixture thickens
  • Let it cool for a bit then pour it into the tart tin
  • Refrigerate overnight to set
  • Once set, cut up strawberries into thin slices from top to bottom and starting withe the bigger ones arrange them around the edge and then on the second time around, overlap the slices. Repeat until you get to the center and as you move to the center use smaller slices.
